Banana cake - deliciously underrated
Crowd pleasers like chocolate cake and cheesecake are always going to top the list, but there's nothing like the familiar aroma that fills your home when baking a simple banana cake.
This resourceful baked good finds its base from old ingredients and can be easily adapted to any palate by pairing it with blueberries, chocolate, nutella or coconut.
Still not satisfied by the versatility of this old favourite? Serve it hot with melted butter at breakfast or cold with ice cream for dessert.
Bake it in a tin and call it cake, or in a loaf pan and call it bread. Had too much (unlikely) and have leftovers? Wrap it in foil in separate pieces and store in the freezer to grab out for an afternoon snack!

Cleo's Banana Cake Recipe:
INGREDIENTS
Cake
1/2 cup soft butter
1 cup brown sugar
3 eggs
2 cups self-raising flour
6 mashed bananas
2 teaspoons baking powder
1/2 cup milk
1/2 cup oil
Icing
1/3 cup icing sugar
250g cream cheese
1 Tablespoon vanilla essence
METHOD
Cake
- Preheat oven to 180C (160C fan forced). Grease and line base of a large 13.5 x 23.5cm loaf pan.
- Cream butter and sugar in a bowl until light and fluffy. Add the eggs and banana and beat into mix.
- Sift flour, and fold into the wet mixture, folding gently through.
- Alternate mixing the milk and baking powder into the mixture until consistency is smooth.
- Pour mixture into pan and place in oven for 40 minutes, or until a skewer comes out clean when tested
Icing
- Combine cream cheese, icing sugar and vanilla essence in a bowl and mix until smooth.
- Apply to cake once it has cooled
