Thai Beef Salad

Ingredients

Ingredients: 
2 Lebanese cucumbers
1 small punnet of cherry tomatoes*
1 Spanish onion
1 bunch of mint or spearmint
1 coriander bunch
1/8 bunch of shallots
4 scotch fillet steaks
Fried shallots
Oil for frying (coconut oil or rice bran oil)
DRESSING:
2 tablespoons of lime juice (2-3 limes)
2 teaspoons of fish sauce
2 tablespoons of raw sugar
1 garlic clove
1 chilli**

Make a tasty, healthy and fresh Thai beef salad! Great as a lunch, dinner or accompaniment at a family get together! The vibrant colours and fresh clean taste will impress everyone, plus it's super quick!

Dressing: Combine liquids stirring until sugar is dissolved. Finely dice the chilli and garlic and add to mixture. Set aside.
Salad: Rinse and pat dry your salad ingredients.
Slice cucumbers into matchsticks.***
Slice tomatoes in half and others in quarters.
Finely slice Spanish onion
Remove your mint and coriander leaves from the stems and roughly chop
Finely slice shallots and add to salad
Mix together in a bowl
Cook Meat: In a frypan cook your scotch fillet steak to your liking. Rest and thinly slice.
Place meat on top of the salad and spoon over the dressing. Mix and serve
