Ingredients
- ½ cup soft butter
- 1 cup brown sugar
- 3 eggs
- 2 cups self-raising flour
- 6 mashed bananas
- 2 teaspoons baking powder
- ½ cup milk
- ½ cup oil
- ⅓ cup icing sugar
- 250g cream cheese
- 1 tablespoon vanilla essence

Step 1
Preheat oven to 180C (160C fan forced). Grease and line base of a large 13 x 24cm loaf pan.
Step 2
Cream butter and sugar in a bowl until light and fluffy. Add the eggs and banana and beat into mix.
Step 3
Sift flour, and fold into the wet mixture, folding gently through.
Step 4
Alternate mixing the milk and baking powder into the mixture until consistency is smooth.
Step 5
Pour mixture into pan and place in oven for 40 minutes, or until a skewer comes out clean when tested.
Step 6
Combine cream cheese, icing sugar and vanilla essence in a bowl and mix until smooth.
Step 7
Apply to cake once it has cooled.
