Ingredients
- 1 packet SANZ crackers, 250g
- 1 litre vanilla custard
- 2 tbsp gelatine powder
- 1/2 cup cold water
Lemon Icing
- 2 cups icing mixture
- 2 tbsp soft unsalted butter
- Juice and zest of 1 lemon

Step 1
Add the gelatine to 1/2 cup cold water and stir to combine.
Step 2
Microwave for 1 minute, then stir. If the gelatine has not dissolved, microwave for another 30 seconds and stir again.
Step 3
Place the custard into a separate bowl. Slowly pour in the gelatine mixture while stirring until well combined.
Step 4
Refrigerate the custard mixture for 1 hour, or until it starts to firm.
Step 5
Line a Wiltshire Slice Pan with baking paper. Cover the base with a layer of crackers, then pour over the custard mixture.
Step 6
Add another layer of crackers on top, then place in the fridge overnight to set.
Step 7
For the lemon icing, mix icing sugar, butter, lemon zest and lemon juice until smooth.
Step 8
Spread the icing over the top layer of crackers. Slice between the crackers and enjoy.
