Ingredients
- 2 large Carisma potatoes, grated
- 1 leek, finely sliced
- 2 eggs
- 2 tbsp pesto
- 1 garlic clove, crushed
- 1 cup chedder, grated
- 1 cup self-raising flour
- Salt & black pepper, to taste
- Olive oil, for cooking
- Dash of milk

Step 1
Grate the potatoes and squeeze out as much moisture as possible. Lightly sauté the leek in a little olive oil until soft, then set aside to cool.
Step 2
Add all ingredients to a mixing bowl and stir until well combined. Depending on the consistency, slowly add a dash of milk.
Step 3
Spoon the mixture into greased silicone muffin cups or lined ramekins that fit your air fryer basket. Fill each about ¾ full.
Step 4
Air fry at 150ºC for 10-15 minutes, or until golden and a skewer inserted comes out clean. You may need to cook in batches depending on the size of your air fryer.
Notes
Cooking time is based on the mini muffin tray. You can also make these in the Silicone Air Fryer Muffin Pan 4 Cup but they will need to be cooked for longer.
