Ingredients
Kebabs
- 1kg beef or lamb mince
- 1 small brown onion, grated
- 1 tbsp minced garlic
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- 1 tbsp sweet paprika
- 1 tsp chilli flakes (optional)
- 2 tsp sea salt flakes
- 1/4 tsp cracked black pepper
- 3 tbsp chopped parsley
- 1/2 tsp bicarbonate of soda
- 2 tbsp olive oil
Sumac Onions
- 1 small red onion, finely sliced
- 1 1/2 tsp sumac
- Juice of 1/2 lemon
- 1 tsp olive oil
- 1/4 tsp sea salt flakes
Garlic Yoghurt Sauce
- 310g Greek yoghurt
- 1/2 tsp minced garlic
- 1 1/2 tbsp lemon juice
- 1/2 tsp sea salt flakes
To Serve
- 6 flatbreads or pita breads
- 2 tomatoes, sliced
- Fresh parsley

Step 1
Preheat the oven to 240°C or 220°C fan-forced.
Step 2
In a large mixing bowl, combine mince, onion, garlic, cumin, coriander, paprika, chilli flakes, salt, pepper, parsley and bicarbonate of soda. Mix well until sticky and combined.
Step 3
Line a baking tray with baking paper. Press the mixture into a large rectangle about 1cm thick.
Step 4
Use a spatula or scraper to cut vertical strips through the mixture. Add shallow horizontal slits across each strip for the classic kebab look.
Step 5
Brush with olive oil and bake for 15-18 minutes until browned with crisp edges.
Step 6
While the kebabs cook, combine onion, sumac, lemon juice, olive oil and salt. Set aside to lightly pickle.
Step 7
Mix yoghurt, garlic, lemon juice and salt until smooth.
Step 8
Warm the flatbreads, then top with kebabs, garlic yoghurt, sumac onions, tomatoes and parsley. Serve immediately.
