Ingredients
- 1.5 cups strawberries measured frozen, slightly defrosted before use
- 1/2 cup water
- 1/4 cup lemon juice
- 1 tsp honey or maple syrup (optional)
- 1/2 cup water to bloom gelatin
- 3 tbsp gelatin

Step 1
Add 1/2 cup water to a bowl with the gelatin and mix until all lumps have been removed. Set aside to thicken.
Step 2
Place the strawberries, slightly defrosted (or fresh), into a blender with the lemon juice, additional 1/2 cup water and sweetener if using. Blend until smooth.
Step 3
Pour the blended strawberry mix into a small saucepan and spoon in the bloomed gelatin
Place the saucepan over low heat and mix for roughly 3 minutes until the gelatin has dissolved.
Step 4
Pour the mixture into moulds and place into the fridge to set for two hours.
