Ingredients
Meatballs
- 500g pork mince
- 1 tsp crushed garlic
- 1 tsp crushed ginger
- 1 spring onion, finely sliced
- 2 tbsp fish sauce
- 2 tbsp oyster sauce
- 1/2 cup panko breadcrumbs
- Salt and pepper to taste
Quick Pickled Veg
- 1 carrot, julienned
- 1/2 cucumber, sliced
- 3/4 cup white vinegar
- 3/4 cup water
- 1 tbsp sugar
Japanese Style Mayo
- 1/2 cup mayonnaise
- 1 tsp dijon mustard
- 1 tsp chicken stock powder
- Juice of 1/2 lemon
To Serve
- Sriracha sauce
- Fresh coriander
- 1 French baguette

Step 1
Combine pork mince, garlic, ginger, spring onion, breadcrumbs, fish sauce and oyster sauce. Season and mix well.
Step 2
Roll into even meatballs and place into a Wiltshire Silicone Air Fryer Collapsible Pan.
Step 3
Cook in the air fryer at 180°C for 15 minutes, turning halfway through.
Step 4
Mix vinegar, water and sugar. Microwave for 1 minute 30 seconds until sugar dissolves. Add carrot and cucumber and let sit.
Step 5
Combine mayonnaise, mustard, stock powder and lemon juice to make the mayo.
Step 6
Slice the baguette. Spread mayo, add meatballs, then top with pickled veg and coriander. Finish with sriracha and serve.
